Lemon Herb Gluten Free Chicken Sheet Pan

Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs, trimmed (680 g)
- 2 medium zucchini, half-moon sliced (400 g)
- 2 bell peppers, thinly sliced (300 g)
- 1 medium red onion, wedged (180 g)
- 2 tablespoons olive oil (27 g)
- 1 lemon, zested and juiced (120 g)
- 2 teaspoons dried oregano (2 g)
- 1 teaspoon garlic powder (3 g)
- 1 teaspoon kosher salt (6 g)
- 1/2 teaspoon black pepper (1 g)
- 1/4 cup chopped parsley (15 g)
Instructions
- Heat oven. Heat the oven to 425°F with a rack in the middle position. Line a large rimmed sheet pan with parchment, or leave it bare for stronger browning. Set the pan nearby and make sure the vegetables will have room to spread.
- Season chicken. Pat chicken dry with paper towels. In a large bowl, combine the thighs with 1 tablespoon olive oil, lemon zest, oregano, garlic powder, salt, and pepper. Turn each piece until the seasoning coats every surface, especially the folded edges. Let it stand while you prepare the vegetables.
- Prepare vegetables. Put zucchini, peppers, and onion on the sheet pan. Drizzle with remaining olive oil and half the lemon juice, then add a pinch of salt and pepper. Toss until glossy, then spread the vegetables in one even layer, leaving open spaces for chicken. Keep zucchini pieces away from the pan edges if they are very thin.
- Roast and finish. Nestle chicken among the vegetables without overlapping pieces. Roast for 22 to 26 minutes, stirring vegetables once halfway through. Check the thickest thigh at 22 minutes; continue until its center reaches 165°F. Squeeze over remaining lemon juice, scatter parsley, and rest 5 minutes before serving. Spoon pan juices over each portion.
Notes
- Choose thighs of similar size so they cook evenly. Place thicker pieces near the pan edge and test them first.
- Divide lemon juice: half seasons vegetables before roasting, while the finishing squeeze preserves brightness and avoids excess moisture in pan.
- For deeper browning, use an unlined metal pan and avoid crowding. Remove chicken first if vegetables need more oven time.
