Ingredients

  • 4 large bell peppers (600 g)
  • 1 pound ground turkey (454 g)
  • 1 tablespoon olive oil (14 g)
  • 1 small onion, diced (120 g)
  • 2 garlic cloves, minced (6 g)
  • 1 cup cooked quinoa (185 g)
  • 1 cup crushed tomatoes (240 g)
  • 2 cups baby spinach (60 g)
  • 1 teaspoon dried oregano (1 g)
  • 1/2 cup crumbled feta (75 g)
  • 2 tablespoons chopped parsley (8 g)
  • 3/4 teaspoon fine salt (4.5 g)
  • 1/2 teaspoon black pepper (1 g)

Instructions

  1. Soften the pepper shells. Heat the oven to 400°F (205°C). Halve the peppers through the stems and remove seeds and white ribs. Set them cut-side up in a baking dish, brush with a little oil, and bake until the walls begin to bend at the rim but still hold their bowl shape.
  2. Brown the turkey. Heat the remaining oil over medium. Add turkey in several broad pieces and allow real contact with the skillet before breaking it smaller. When no pink remains, add onion, garlic, oregano, salt, and pepper. Cook until the onion is translucent and the turkey has scattered browned edges.
  3. Reduce the filling. Stir in crushed tomatoes and simmer until a spoon dragged through the skillet leaves no watery trail. Fold in spinach until wilted, then remove from the heat and add quinoa and half the feta. The mixture should mound on the spoon rather than pour from it.
  4. Fill and finish. Blot any collected liquid from the pepper shells. Divide the filling evenly, pressing gently into the corners without compacting it into a solid block. Top with remaining feta and bake uncovered until the pepper edges are tender and the cheese shows light golden patches. Finish with parsley.

Notes

  • Ingredient size affects timing, so favor even cuts while allowing naturally irregular arrangement.
  • The decisive finished cue is pepper shells that bend slightly and a filling reduced until no liquid trails behind the spoon; wait for it before adding the final garnish.
  • Refrigerate for 4 days and reheat portions gently, keeping fresh parsley separate until serving.
