Ingredients

  • 1 tablespoon olive oil (14 g)
  • 1 1/2 pounds ground beef (680 g)
  • 1 red bell pepper, diced (160 g)
  • 1 onion, diced (110 g)
  • 3 minced garlic cloves (9 g)
  • 1 cup salsa (240 g)
  • 2 teaspoons ground cumin (4 g)
  • 1 teaspoon chili powder (3 g)
  • 1 teaspoon kosher salt (6 g)
  • 1/2 teaspoon black pepper (1 g)
  • 4 large eggs (200 g)
  • 3 cups baby spinach (90 g)
  • 1 cup cheddar cheese (113 g)

Instructions

  1. Prepare ingredients. Dice pepper and onion evenly. Mince garlic, tear large spinach leaves, and shred cheese if needed. Whisk eggs, salsa, cumin, chili powder, salt, and pepper in a medium bowl.
  2. Soften vegetables. Heat oil in a large, deep skillet over medium-high. Add onion and pepper; cook 3 minutes, stirring often, until edges soften but centers retain firmness. Avoid deep browning.
  3. Brown beef. Push vegetables aside and add beef to the center. Break into small crumbles; cook 6 to 8 minutes, stirring occasionally, until no pink remains and the thickest portion reaches 160°F. Spoon off excess fat if greasy.
  4. Add aromatics. Add garlic; stir 30 seconds until fragrant. Fold in vegetables, then add spinach in two batches. Stir until wilted, scraping browned bits from the skillet bottom into the filling.
  5. Cook eggs. Reduce heat to medium-low and pour egg mixture evenly over filling. Stir gently for 1 minute, then stop. Cover and cook 4 to 5 minutes, until mostly set with a slightly glossy center.
  6. Melt cheese. Scatter cheddar over the surface, cover, and cook 2 minutes until melted. Rest 3 minutes, then scoop into four portions, taking from different areas so each serving includes beef, vegetables, eggs, and cheese.

Notes

  • Choose a salsa whose heat and texture you enjoy, since it seasons the eggs and supplies moisture. Chunky salsa leaves distinct tomato and pepper pieces; smooth salsa distributes more evenly.
  • For a lighter finish, use Monterey Jack or reduce cheddar to 3/4 cup. The skillet still sets well, although its cheese layer will be thinner and less stretchy.
