Ingredients
- 1 tablespoon olive oil (14 g)
- 1 1/2 pounds 85% lean ground beef (680 g)
- 1 medium yellow onion, diced (150 g)
- 1 green bell pepper, diced (120 g)
- 3 garlic cloves, minced (9 g)
- 2 tablespoons chili powder (16 g)
- 2 teaspoons ground cumin (5 g)
- 2 tablespoons tomato paste (32 g)
- 1 can diced tomatoes, undrained (411 g)
- 1 1/2 cups beef broth (360 g)
- 1 teaspoon kosher salt (6 g)
- 1/2 teaspoon black pepper (1 g)
Instructions
- Prep ingredients. Dice onion and bell pepper into small, even pieces, and mince garlic. Measure chili powder, cumin, tomato paste, tomatoes, broth, salt, and pepper before heating the pot.
- Brown beef. Heat olive oil in a Dutch oven over medium-high heat. Add beef, break it into large pieces, and leave it undisturbed for two minutes. Continue cooking for about five minutes, stirring and breaking, until no pink remains and browned bits cover the pot bottom.
- Cook vegetables. Reduce heat to medium. Add onion and pepper; cook, stirring often, for five minutes until softened. Add garlic and stir for thirty seconds, just until fragrant, taking care not to let it brown.
- Bloom seasonings. Stir in chili powder, cumin, tomato paste, salt, and pepper until the meat is evenly coated. Cook for one minute, stirring constantly, until the paste darkens slightly and the spices smell toasted.
- Simmer. Pour in tomatoes with their juices and broth, scraping thoroughly to release browned bits. Bring to a steady simmer, reduce heat to low, and cook uncovered for twenty minutes, stirring twice, until peppers are tender and liquid thickens around the beef.
- Finish chili. Remove pot from heat and let chili rest five minutes. Taste, then adjust salt, pepper, or chili powder as needed. Spoon into bowls, or cool and divide into containers for later meals.
Notes
- The listed broth quantity produces a spoonable chili rather than a dry beef skillet. Continue simmering uncovered if you prefer a thicker final texture.
- Ground turkey can replace beef, but it produces a less rich chili; add olive oil if the pot looks dry.
- Use diced tomatoes packed in juice so the spice blend, rather than added seasoning, remains the main flavor driver.
