Creamy Tuscan Keto Crockpot Chicken

Ingredients
- 2 lb boneless, skinless chicken thighs, trimmed (907 g)
- 1 cup chicken broth (240 g)
- 1/2 cup drained oil-packed sun-dried tomatoes, chopped (75 g)
- 1 cup heavy cream (240 g)
- 1/2 cup finely grated Parmesan cheese (50 g)
- 4 cups packed baby spinach (120 g)
- 1 tbsp dried Italian seasoning (8 g)
- 1 tsp garlic powder (3 g)
- 1/2 tsp kosher salt (3 g)
- 1/4 tsp black pepper (1 g)
- 1 tbsp lemon juice (15 g)
Instructions
- Layer chicken. Arrange chicken thighs in an even layer in a 5- to 6-quart slow cooker. Sprinkle the Italian seasoning, garlic powder, salt, and pepper over the meat. Scatter the chopped sun-dried tomatoes across the top, then pour the broth around the chicken without washing away the seasonings.
- Slow cook. Cover and cook on low for 4 to 5 hours, or high for 2 to 3 hours. Check the thickest thigh with a thermometer; it should reach 165°F in the center. Cooker timing can differ, so use temperature and tender texture as the final cues.
- Shred chicken. Move the thighs to a plate, leaving the cooking liquid in the cooker. Shred the chicken with two forks into bite-size pieces, keeping some larger strands for texture. Return the chicken and any juices from the plate to the seasoned broth.
- Make cream sauce. Turn the cooker to high. Stir in the heavy cream, then add Parmesan gradually, stirring after each addition until the cheese melts. Cover and cook for 15 minutes. The sauce should look smooth and lightly thickened around the chicken.
- Add spinach. Stir in the spinach, cover, and cook 5 to 10 minutes until wilted. Stir in lemon juice. Let the chicken stand uncovered for 5 minutes, then taste and add pepper if desired before dividing among six servings.
Notes
- For a thicker sauce, leave the cooker uncovered on high for 10 minutes after adding spinach. Stir once or twice so the sauce reduces evenly around the chicken.
- Finely grated Parmesan is important here. Coarse shreds may take longer to melt and can leave small strings of cheese instead of a smooth sauce.
- Serve vegetables separately when meal-prepping if you prefer them with a firmer texture after reheating.
