Garlic Butter Keto Shrimp Skillet

Ingredients

  • 4 cups raw large shrimp, peeled and deveined (454 g)
  • 1 tablespoon olive oil (14 g)
  • 1 teaspoon kosher salt (6 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1/2 teaspoon smoked paprika (1 g)
  • 3 tablespoons unsalted butter (42 g)
  • 4 cloves garlic, finely minced (12 g)
  • 1/4 teaspoon red pepper flakes (1 g)
  • 3 tablespoons fresh lemon juice (45 g)
  • 1/2 cup heavy cream (120 g)
  • 1/4 cup chopped fresh parsley (15 g)
  • 4 cups prepared zucchini noodles (600 g)

Instructions

  1. Prepare shrimp. Pat the shrimp very dry with paper towels. Season it with salt, pepper, and smoked paprika. Arrange the remaining ingredients near the stove, since the shrimp and sauce cook quickly once the skillet is heated.
  2. Heat the skillet. Heat olive oil in a large skillet over medium-high heat until shimmering. Add half the shrimp in a single layer. Cook for about 1 minute, until the bottom looks opaque and lightly browned.
  3. Cook shrimp. Turn the shrimp and cook for about 1 minute more, until mostly opaque. Transfer it to a plate. Repeat with the remaining shrimp, then transfer that batch to the plate as well.
  4. Cook aromatics. Reduce heat to medium and add butter. When melted, stir in garlic and red pepper flakes. Cook for 30 seconds, scraping up browned bits, until the garlic is fragrant but not browned.
  5. Make sauce. Stir in lemon juice and heavy cream. Simmer gently for 2 to 3 minutes, stirring often, until the sauce thickens enough to coat a spoon. Taste and adjust salt or pepper if needed.
  6. Finish skillet. Return shrimp and any juices to the skillet. Toss for 1 to 2 minutes, until the shrimp is opaque through the centers and coated with sauce. Remove from heat, stir in parsley, and serve over vegetables.

Notes

  • Use raw shrimp rather than precooked shrimp. Precooked shrimp needs only brief warming and can become rubbery if it follows the full searing method.
  • For frozen shrimp, thaw completely, drain, and dry before seasoning. Starting with wet shrimp creates steam and prevents the light browning that adds flavor to the sauce.
  • Keep vegetable bases separate until serving. Zucchini noodles especially release water, so adding them directly to the skillet can loosen the cream sauce.
