Ingredients

  • 1 1/4 pounds ground turkey (565 g)
  • 1 large egg, beaten (50 g)

  • 1 teaspoon garlic powder (3 g)
  • 5 cups broccoli florets (450 g)
  • 2 bell peppers, chopped (300 g)
  • 1 tablespoon olive oil (14 g)
  • 1 cup Greek yogurt (240 g)
  • 1/3 cup tomato sauce (80 g)
  • 1 tablespoon lemon juice (15 g)
  • 1 teaspoon smoked paprika (2 g)
  • 3/4 teaspoon fine salt (4.5 g)
  • 1/2 teaspoon black pepper (1 g)

Instructions

  1. Fold the turkey lightly. Heat the oven to 425°F (220°C). Combine turkey, egg, oat flour, parsley, garlic powder, salt, and pepper. Fold with a fork until no dry flour remains, stopping before the mixture becomes dense or sticky. Portion sixteen mounds with a scoop and round them gently without compressing.
  2. Arrange separate pan zones. Place meatballs on one side of a large rimmed pan with space around each one. Toss broccoli and peppers with oil and smoked paprika, then spread them across the other side with flat surfaces against the metal. Bare pan should remain visible between the vegetables.
  3. Roast to both cues. Roast until meatball edges brown and the centers reach 165°F (74°C). The broccoli should show dark green tips and browned flat sides while the pepper pieces remain plump. Remove either zone first if necessary; matching the two checkpoints matters more than taking everything out together.
  4. Cool and portion. Stir yogurt, tomato sauce, and lemon until smooth and spoonable. Let the roasted food lose its strong heat, then place four meatballs and an even vegetable mix into each container. Divide sauce among small cups. Close the boxes only after the glass has no visible condensation.

Notes

  • Ingredient size affects timing, so favor even cuts while allowing naturally irregular arrangement.
  • The decisive finished cue is loosely shaped meatballs with browned edges and vegetables that still keep their shape; wait for it before adding the final garnish.
  • Refrigerate for 4 days and reheat portions gently, keeping fresh parsley separate until serving.
