Chicken Cabbage Tomato Skillet

Lean chicken breast, softened cabbage, and crushed tomatoes cook in one skillet with garlic and oregano, creating a lightly saucy dinner designed for low-carb, low-fat meal planning days.

Ingredients

  • 1 1/2 lb boneless, skinless chicken breast, cut into 1-inch pieces (680 g)
  • 1 tbsp olive oil (14 g)
  • 1 tsp kosher salt, divided (6 g)
  • 1/2 tsp black pepper (1 g)
  • 1 medium green cabbage, cored and thinly sliced (900 g)
  • 3 garlic cloves, minced (9 g)
  • 1 tsp dried oregano (1 g)
  • 1 can crushed tomatoes, no-salt-added, 28 oz (794 g)
  • 1/2 cup water (120 g)
  • 2 tbsp fresh chopped parsley, optional (8 g)

Instructions

  1. Prep chicken. Set a 12-inch deep skillet over medium-high heat. Pat chicken dry, season with 1/2 teaspoon salt and pepper, and arrange cabbage, garlic, oregano, tomatoes, water, and remaining salt near the stove.
  2. Brown chicken. Add oil and chicken in a single layer. Cook without moving for 3 minutes. Turn pieces and cook 2 minutes, until lightly browned. Transfer chicken and juices to a plate; it will finish later in the tomato sauce.
  3. Wilt cabbage. Reduce heat to medium. Add cabbage and water, scraping the skillet bottom. Cover and cook 5 minutes, stirring once. The cabbage should shrink noticeably but still have firm ribbons at the edges.
  4. Sauce. Uncover, add garlic and oregano, and stir for 30 seconds. Pour in tomatoes and remaining salt. Bring to a steady simmer, scraping browned bits from the pan, until the sauce bubbles evenly around the cabbage.
  5. Finish. Return chicken and plate juices. Simmer uncovered for 6 to 8 minutes, stirring once or twice, until chicken reaches 165°F in the center and the tomato liquid clings to cabbage rather than pooling in the skillet.
  6. Rest. Remove from heat and rest 3 minutes. Taste and adjust salt or pepper. Spoon into four bowls, dividing chicken evenly, then scatter parsley over the top if using. Serve hot with your chosen side.

Notes

  • Use a wide, deep skillet so the cabbage can lose moisture after its covered phase; a narrow pot leaves the sauce thinner.
  • Chicken is ready when the thickest piece reaches 165°F in the center; pull it promptly so the breast stays tender.
  • Crushed tomatoes vary in thickness. If yours are very dense, add water gradually; if loose, simmer uncovered a few extra minutes.
