Spinach Feta Egg Bake

Ingredients
- 1 tablespoon olive oil (14 g)
- 8 ounces cremini mushrooms, sliced (227 g)
- 3 scallions, thinly sliced (45 g)
- 2 garlic cloves, minced (6 g)
- 5 ounces baby spinach (142 g)
- 6 large eggs (300 g)
- 1/3 cup heavy cream (80 g)
- 1 teaspoon dried oregano (1 g)
- 1/2 teaspoon black pepper (1 g)
- 1/4 teaspoon fine salt (1 g)
- 4 ounces block feta cheese, crumbled (113 g)
- 1 tablespoon chopped fresh dill, optional, for serving (4 g)
Instructions
- Heat oven. Heat oven to 375°F and set a rack in the center. Place a 10-inch ovenproof skillet over medium heat. Add olive oil, then mushrooms and salt. Cook, stirring occasionally, until mushrooms have shrunk and the pan is mostly dry, 6 to 8 minutes.
- Add aromatics. Stir in scallions and garlic for 30 seconds. Add spinach in batches, turning it into the mushrooms until fully wilted. Remove skillet from heat and spread vegetables into an even layer. If using a baking dish, transfer vegetables now.
- Whisk filling. Whisk eggs, cream, oregano, pepper, and dill, if using, in a bowl until evenly combined. Fold in three quarters of feta. Pour over vegetables, then gently nudge the filling with a spatula so spinach and mushrooms are distributed throughout.
- Bake until set. Top with remaining feta and transfer skillet or baking dish to the oven. Bake 14 to 18 minutes, until the center no longer appears liquid when nudged and the edges are lightly golden. Do not overbake; the eggs continue settling during the rest.
- Rest and portion. Set the pan on a rack for 8 to 10 minutes before slicing. Run a flexible spatula around the edge, cut into four wedges, and lift carefully. Sprinkle each portion with any feta left in the pan and serve warm or at room temperature.
Notes
- An 8-inch square baking dish can replace the skillet after sautéing. Begin checking at 14 minutes, because a different vessel may change how quickly the center sets. Keep the vegetables in a single, even layer before adding eggs for more uniform wedges.
- Fresh dill is optional but useful if you want a brighter herbal note. It is a flavor trade-off, not a requirement for the bake’s structure.
